I can't extract the installer files otherwise. There's no rar file requiring a password.
Installer is divided into two parts, but if you run executable it will automatically use the other one in the installation process (the same goes with installers with more than two files - start setup executable and it will take care of everything). There's no need to extract installer. Bonus materials are compressed, yes, but they do not require any passwords to extract them.

I must be doing something wrong then, because the installer won't detect the second part (2.5GB) even though they're located in the same folder. I've attached a screenshot showing this.

EDIT: Never mind, I fixed it by changing the file extension to.bin. It came out as.rar after my download, for some reason. You could try redownloading the exe (or even both) or moving setup files to other directory and try again, but otherwise I don't think I can help you with this. It may require asking GOG support for help. By the way, installers are created with innosetup and you can't extract them using regular winrar or winzip programs.
You have to use innoextract, but the problem isn't in extracting files but with setup itself, IMHO. Edit: Another: that's weird.:P. Just for your interest, the KotOR installer actually does have a password.
A while ago GOG created a few new installers with password-protected RAR archives, KotOR being one of the games affected. Forum users complained of course, since it made life more difficult for those of us who like to extract the installers and there is really no good reason for it. The password is a MD5 hash: 191038cdd4c20f7ea304acad844868a3, generated from the game's ID (). Innoextract will actually automatically extract the archive by providing the password for you.
